I have been specializing in chocolate dragée for years... teaching classes about it worldwide, opening a shop about this in Tokyo, training many pastry chefs in persons!
I want to share with you how to do a special recipe of nougat in order to make dragées with! It requires time and technique to have a great result! We will finish it with kinako powder (japanese soy bean powder)
