In this course I will focus on the molded chocolate bonbons. I will use the molds I designed, but you can of course use any others molds!
I want to introduce here a new way of doing chocolate bonbons, no use of inverted sugar nor syrup of glucose.
No preservative and focus on ingredients which are considered healthier... even if the confectionery world is on the hedonism part and not intend to be consumed for a diet!
